It is interesting how the elements in food and wine compare and contrast one another. It is not simply about drinking specific wines with specific foods, but rather it is important to match elements in the foods by utilizing their categoristics. For instance, wine with high tannins are paired best with food with salt, butter/fat, and umami flavors. When the elements in wine complement the flavors in food, it is a good pairing. Understanding the elements of both is what will lead to a successful pairing.
In response to the following article, I found it to be interested that tannin and oak are the “least flexible elements that both dictate a narrow range of dishes that pair well” (http://www.timgaiser.com/food–wine-pairing.html). I also thought it was interesting that with salty foods pair well with tannin in red wines.
I really enjoyed this article. My girlfriend and I went to a winery this summer and tasted a bunch of different wines. It was interesting to see the assortments of different foods that the winery offered. Just as you said in the article, they told us at the winery that sweeter wines could be paired with almost any kind of food except for red meat. I really enjoyed this article!
